||A cornish game hen, what else!
Last night, I made some cornish games hens wrapped in a dough crust and seasoned with lemon, lemon zest, garlic oil and rosemary - I just love this way of preparing these mini-birds and it is really much easier to cook/prepare than constantly having the rotate the birds while they cook in the oven. The crust, which is just water and flour and not very good to eat, steams the meat and it cooks very nicely! We scarfed the hens, broiled asparagus and some amazing Anjou pears (oh yes, and vanilla bean ice cream with Heath bar crumbled on top) down before we rushed off to the Fillmore to see the wonderful Jeff Tweedy!
