Spanish Monday

Kev and I and our friends Sarah and Grant gathered for our first weekly Spanish lesson with our lovely profesora, Angelica. We thought Spanish lessons once a week would be fabulous to not only brush up on the language but also to drink good Spanish wine (I had 2 sips of the Rioja but it didn't taste too good) and munch on some nice Spanish cheese (a machego, a drunken goat milk and another raw milk that was off limits) and tapas! So, for this special occassion, I entered the kitchen...

I whipped up one of my favorite tapas of all time, Pancetta-Wrapped Dates Stuffed with Almonds, with ease. I even ate 3 of them (nitrates...opps!). I love this simple yet delicious little appetizer! Fun fun and yum yum!
