Last night, we assembled ourselves a Spinach and Grilled Chicken salad. I used my friend Sarah's soy-marinated chicken recipe for the chicken and ahhhhh, I just die for that recipe! The chicken turns out sooooo tasty and I only marinated it for about 5 hours. Our salad contents were: spinach, goat cheese, heirloom tomatoes, slivered white onions, pistachios, the grilled chicken and a balsamic vinaigrette. It was really really good - usually, being the gourmand that I am, I don't get full from just eating salad for din din but this salad (oh, and our brocollini antipasto to start) was just right!
