Gourmet magazine flop

I was really excited as I browsed through a recent copy of Gourmet magazine because they included a recipe for Vietnamese Rice Noodles with Caramelized Pork...This is the exact thing I order at Zao Noodle Bar (California at Fillmore), one of our most-frequented restaurants in our old hood of Pacific Heights.

So last night, we were going to have my exact order from Zao...

Unfortunately, Gourmet Magazine failed me again...I won't go into details about how much Kev and I both despised this recipe but I once read on a forum on egullet, a website for the amazing chefs and foodies of the world, about where people find the best recipes and they said they too despise the inconsistencies of the cooking magazine recipes (the pressure of filling the mag with new recipes each month results in some not-so-great stuff). Excluded however is the wonderful Cook's Illustrated, the best cooking magazine around!

The good news from last night is that I did conjure up a really super dressing for the Vietnamese Noodles that was not included in Gourmet's idiotic recipe...! Here's the recipe so I don't forget: 5 1/2 tbsp sugar, 1/4 cup warm water, 1/4 cup+1 tbsp fish sauce, 2 tbsp rice vinegar, 2 tsp lime juice, 2 garlic cloves, finely minced, 1 tsp chili/garlic sauce.
