Adventures with Quinoa

I've had a box of quinoa from Trader Joes (pronounced "Keen Wah") in the cupboard forever. So when I cleaned it out last week, I found the box, dug up a recipe and quinoa is now my new best staple! Firstly, so I can explain this to somebody when they ask me, quinoa is a grain that was used by ancient Incas and a staple in any South Americans' diet. It looks like a little seed but when it cooks, a little band around each grain spirals out and it kind of looks like couscous gone wild. Crazy stuff but I'm glad I bought it because it certainly makes for an impresive side dish.

Last night, we ate Kevin's specialty Anchovy-Seasoned Halibut, a carrot soup with a delectable cilantro salsa and the quinoa with red pepper, black beans, corn and a cumin dressing. Ahhhhhh, simply marvelous!!!!!!!

Then, Kevin and Kent, my two favorite worker bees, stayed up until 2am working on a newly-improved Reenie's Recipes website. I love you guys!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! And I love Reenie's Recipes so much that I want to marry it!!!! Thank you thank you thank you!!!!!!!!!!!!!!!!!!!!
